6 C organic rolled oats (GF)
2 C organic, unsweetened shredded coconut
6 dates, pitted and cut into pieces
1 1/2 – 2 c nuts – your choice (almonds, pecans, macadamia, walnuts, etc.)
1/2 C honey
1/2 C coconut oil, melted
1/2 tsp. sea salt
3 T chia seeds (add after baking)
Preheat oven to 375°F. Place the coconut oil in a Pyrex (heat proof) liquid measuring cup and place in the oven to melt as the oven preheats.
Mix oats, coconut, nuts and dates in a large bowl.
Remove coconut oil from oven and mix in the honey.
Add liquid to dry mixture and mix well.
Spread into even layer on a baking sheet.
Bake 10 minutes. Remove from oven and stir.
Bake another 10 minutes. Remove from oven and stir.
You want the granola to look toasty.
Take out and sprinkle with 3 T chia seeds. Stir through and after cooling store in an air tight container or Ziploc bag.
NOTES: Try mixing different grains and dried fruit (unsulphured and unsweetened) for a variety. This recipe is easily cut in half, just make sure you decrease baking time as well.
