Stuffed Delicata Squash
2 delicata squash, deseeded and halved lengthwise
1 Tbsp olive oil
1 garlic clove, peeled and minced
1 onion, peeled and diced
2-3 celery sticks, diced
½ C quinoa
1 C water, vegetable or chicken stock
2-3 tsp herbed sea salt
8 oz organic roasted turkey (or chicken), diced
2 Tbsp fresh sage, minced or 1 tsp dried sage
Preheat oven to 375°F. Lightly oil a baking pan. Cut squash in half lengthwise to remove seeds. Place squash in baking pan and cover with aluminum foil. Bake 40 minutes or until squash is soft.
While squash is cooking, add olive oil to a skillet and sauté garlic and onion for 2-3 minutes. Add celery and cook for 3-5 minutes or until vegetables are soft and wilted. Add quinoa, water, turkey and seasonings. Bring to a boil. Cover, lower flame and cook on simmer for 12-15 minutes. Spoon quinoa and turkey mixture into baked squash and serve.
